Easy Green Beans

Exactly like the title states, these are easy green beans. They cook up perfectly – quickly and in one skillet.  Cooking doesn’t have to be difficult.

Easy Green Beans

Ingredients
  

  • 12 ounce Green Beans trimmed
  • 1/4 cup Water
  • 1 tbsp Butter
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper

Instructions
 

  • Combine green beans and water in a large skillet.
  • Bring to a boil over high heat. Once it reaches a boil, cover and cook for 3 minutes.
  • Uncover pan and stir in butter. Cook 1 minute or until water evaporates ad beans are crisp tender.
  • Sprinkle beans with salt and pepper.

Brown Butter Cucumbers

I have to be honest and say that i was unsure how this would turn out the first time that i made this. That said, it has been added to the site, because it’s just that good.

The brown butter cucumber actually end up being more like a warm relish that you can add on top of whichever protein you’re cooking. The cucumber soaks up all that flavor from the browned butter, making every bite savory.  It’s a great low carb way to have a delicious meal. We’ve made this to go with chicken and with fish like mahi or swordfish. 

Brown Butter Cucumber

This is great on top of white fish or chicken. IT makes a warm buttery relish that is so good!

Ingredients
  

  • 2 tbsp Butter, Unsalted
  • 2 Cumcumber kirby type
  • 2 clove Garlic
  • 2 tbsp Cilantro, Fresh chopped
  • 2 tsp Lemon Juice

Instructions
 

  • In a skillet over medium-high, melt the butter, cooking it until the foam subsides and it turns deep gold
  • Add cucumbers and a pinch of salt. Cook for about 4 minutes.
  • Add garlic and cook until cucumbers soften, about 3 minutes.
  • Stir in cilantro and lemon juice. Cook for 20 seconds.
  • Season with pepper and more salt and lemon, if desired. Serve atop grilled chicken or fish.

Creamy Bacon Pea Salad

Traci helped find this recipe back when i first started trying to lower my carb intake. And in fact, this recipe was one of the recipes that help to drive the creation of this blog. We get asked for this recipe, without fail, every time we bring it to an event.

It takes a little bit of preparation time, but its totally worth it. I also  recommend letting it rest for a day to allow all the flavors to meld in with the mayo.

Creamy Bacon Pea Salad

Always a hit at BBQs and potlucks.

Ingredients
  

  • 16 ounce Frozen Peas, bag thawed in cool water
  • 1 cup Cheddar Cheese shredded
  • 5 ounce Bacon cooked & crumbled
  • 1 rib Celery chopped
  • 1/3 cup Onion finely chopped
  • 2 tbsp Chives chopped fresh, or 1T dried
  • 8 Eggs, Hard Boiled peeled & chopped
  • 1 cup Mayonnaise
  • 1 tsp Seasoned Salt

Instructions
 

  • Combine all the ingredients and season with seasoned salt, to taste.
    Can be enjoyed immediately or stored in the refrigerator for up to 5 days.
